Red Spice Road is again joining forces with Victoria’s (and quite possibly Australia’s) favourite gin, Four Pillars, for a splendid foodie feast!

This dinner is all about the botanicals. Head Chef, Dylan McCormack, has drawn inspiration from the eclectic range of botanicals used across the Four Pillars’ range of gins to create this mighty menu – boasting flavours such as cassia bark, cardamom and lemon myrtle. The team at Four Pillars have in turn handcrafted 5 unique cocktails for the night, perfectly paired with the menu that Dylan has designed. We’ll also be adding more than just cocktails to the mix, with a few matching wines from another Yarra Valley local, Payten & Jones.

Blanc – Four Pillars Rare Dry Gin, Bianco, Suze: served down w/ white grapefruit

Ceduna S.A. oysters, karachi scorched finger limes, coriander oil (GF, DF)
Raw yellow fin tuna, burnt blood orange, curry leaf, cardamom (GF, DF)
Avlium – Four Pillars Spiced Negroni Gin, blood orange x wild rosé, curry leaf: served up w/ blood orange oils

Tides – Four Pillars Underground Sydney Gin, caper, Italicus: served up w/ caper oil

Cassia bark smoked groper, pepper leaf, wild rice (GF, DF)
Wallaby, lemon myrtle, Javanese pepper, shaved starch (GF, DF)
Flume – Four Pillars Modern Australian Gin, Davidson plum, peppercorn, ginger, sherbet: served swizzled w/ plum dusting
