This dinner is all about the botanicals. Head Chef, Dylan McCormack, has drawn inspiration from the eclectic range of botanicals used across the Four Pillars’ range of gins to create this mighty menu – boasting flavours such as cassia bark, cardamom and lemon myrtle. The team at Four Pillars have in turn handcrafted 5 unique cocktails for the night, perfectly paired with the menu that Dylan has designed. We’ll also be adding more than just cocktails to the mix, with a few matching wines from another Yarra Valley local, Payten & Jones.
